Got Powdered Milk? Magic Mix and Chocolate Pudding!

Missy, my daughter, turned me on to a fun and delightful web page called Everyday Food Storage (www.everydayfoodstorage.net).   Crystal Godfrey, the young mom who hosts the site has hundreds of creative ideas.  She is also the author of a book, “I Can’t Believe it’s Food Storage.”  She has some tips for getting your three month supply of pantry items and includes a downloadable shopping list. 

USING POWDERED MILK
Powdered milk has always gotten a bad rap.  As a child I would rather go hungry than drink powdered milk.  The quality and taste has improved (I’ve heard a rumor), but it’s still a challenge to use it.  The Utah State Extension Service has developed something called Magic Mix.  It is a combination of powdered milk, butter and flour and is the basis for making white sauce. It’s featured prominently on the Everyday Food Storage site and one can find all kinds of recipes there besides the ones for white sauce and gravies. 
RECIPE FOR MAGIC MIX
2  1/3 c. dry powdered milk (if using instant, double that amount)
1 c. all-purpose flour
1 c. (2 sticks) butter at room temperature
Combine dry milk, flour, and butter into a large bowl.  Mix with electric hand mixer until it looks like cornmeal.  Keep mix tightly covered in the refrigerator for up to eight months.  Use in any recipe calling for white sauce,  like creamy soups, mac and cheese, pasta sauces and veggie dishes like new potatoes with peas. Yield: 5 cups.
MAGIC MIX WHITE SAUCE—Makes 1 Cup White Sauce
2/3 cup Magic Mix             1 cup Water
In saucepan combine all ingredients.  Stir rapidly with a whisk over medium heat until it starts to bubble. Remove from heat immediately.
I’m making more of the Magic Mix recipe today.  If all goes as planned, I will be making the following pudding recipe for dessert tonight.

MAGIC MIX PUDDING (Serves four)
½ c. sugar
1 c. Magic Mix
2-3 T cocoa (optional. I liked it with 3 T cocoa.)
2 c. water
1tsp. Vanilla (don’t add until the end)
Combine Magic Mix, sugar and cocoa in saucepan and mix well. Add water, stir over medium heat until pudding bubbles.  Remove from heat, add vanilla and beat.  Cover and cool.
